RICHMOND, R.I, February 22, 2023 /PRNewswire/ — The Preserve Sporting Club & Residences today announced its latest partnership, a 15-year agreement with the internationally acclaimed chef and restaurateur, David Burkes. Chef Burke will oversee all culinary operations at The Preserve through restaurant operations and consulting firm David Burke Hospitality Management (DBHM). At the heart of the partnership will be the transformation of The Preserve’s main restaurant, Double Barrel Kitchen. Burke is recognized as a leading pioneer of American cuisine and will be crafting a Double Barrel Steak menu that showcases modern American steakhouse-inspired cuisine. The menu features beef that is dried-aged on-site using Burke’s patent US 7,998,517 B2 Himalayan salt process. As a nod to Rhode Islands Nicknamed “Ocean State,” the restaurant will offer what Burke calls “ocean steaks,” including swordfish, halibut, and tuna. The variety of appetizers and resurrection of Burke’s famous swordfish cutlets – a worldwide sensation when they were introduced on New York City’s Park Avenue Cafe in the early 1990s – will call Double Barrel Steak a seafood restaurant and steakhouse. In homage to The Preserve’s outdoor experiences, game will also play a seasonal role on the menu.
“The Preserve is honored to welcome you David Burkes and his team, there is no greater compliment than Chef Burke’s willingness to lead our culinary programs,” said Mihailides. “We look forward to welcoming our members and guests to The Preserve to experience Chef Burke’s renowned styles enjoy.”

“The Preserve is an exciting new partnership for us as, in addition to Double Barrel Steak, we will be responsible for two of the most exceptional private dining venues I have ever seen,” said Burke. “The mark of the manufacturer HOBBIT-HÄUSERTM an enchanting place where a memorable meal becomes a once-in-a-lifetime, bourbon-infused experience. And the Cohiba & Laphroaig Safari tasting tent, where a scotch and cigar takes center stage with intriguing finger food. Another bonus of the partnership is my longstanding relationship with the Chairman of The Preserve, Paul Mihailides. I look forward to working with him to further strengthen The Preserve’s status as a world-class sporting club.”
